As I am typing this, we are in the midst of Hurricane Florence and fortunate enough to have a generator. I highly suggest them! I cannot put into words how grateful (and awesome) it feels to have a hot cup of coffee! To have some power is just fantastic and I am incredibly thankful for it!!!!!
Lazy Chicken Tacos are so easy, so lazy! Only three ingredients: shredded chicken, garlic, Herdez Salsa Verde. You can also sub ground turkey and to make them super lazy, buy a rotisserie chicken, no judgement!
Later in the week, transform them into quesadillas for a quick dinner. Assemble, spray the pan with a little olive oil, and pop into your toaster oven. We have a Breville brand that is pretty awesome. It toasts and bakes, so we don’t have to heat up the house with the oven. A super-easy weeknight meal!
Ingredients:
2 cloves garlic minced
Roughly 3 cups shredded chicken (homemade or rotisserie) or 1lb ground turkey
1 jar of Herdez Salsa Verde (it is so good!)
Olive Oil
Salt+Pepper to taste (although, with the salsa you may not need it)
Tortillas and your favorite taco toppings and sides
Method:
- Sauté garlic for about 2 minutes in small amount of olive oil (maybe a tablespoon, I don’t normally measure)
- Add cooked shredded chicken and jar of salsa.
- Let reduce for about 10 minutes or until the salsa is reduced by about half. I also rinse out the jar with a little water (1/2 or so) to make sure I get all of the salsa.
- Serve with warm tortillas and your favorite sides/toppings. We like yellow rice and queso fresco cheese.
